Beating Beets Bad Rep

Two weeks worth of beets from the Birdhouse Buying Club, which we are a part of weekly

This cookbook came from MoJo’s Used Books, and is an older cookbook called The Seasonal Kitchen: A Return to Fresh Foods by Perla Meyers and this recipe alone has made me believe that it is amazing and I’d like to make everything in it.

Cut into “matchsticks” as the recipe suggested. They are pretty fat matches.

Sauted in buttah.

Ree Drummond would be proud of this use of heavy whipping cream.

The finished product. Much parsley and pepper to top it off. Nate, Emily, and I all decided that we think beets have a place in our garden and I decided that this dish has a place next to a very nice steak or some other such thing.
